If you find yourself in the great outdoors this summer in need of a quick and filling meal, this recipe is your answer.  After all, you can only get so far when your empty stomach growls at you to stop!  This classic campfire meal is meant to be enjoyed slow, burned off fast, and is best while car camping or with friends around your backyard campfire. With this many ingredients though, it might be best to leave this one on the back-burners if you are ultralight camping!  Enjoy!

Ingredients: (Serves Six)

  • 1lb lean ground beef
  • 1 can of whole tomatoes
  • 1 medium onion, chopped (about 1/2 a cup
  • 1 package chili seasoning mix
  • 1 can sliced and drained, ripe olives
  • 1 cup shredded cheddar cheese
  • 1/2 cup original Bisquick mix
  • 1 cup whole milk
  • 2 eggs
  • Sour Cream
  • Shredded Lettuce

Directions:

  1. Heat oven to 400 degrees
  2. Spray 9 inch pie plate with cooking spray
  3. In 10 inch skillet, cook beef over medium heat, stirring occasionally until brown (8-10 minutes)
  4. Stir in cut up tomatoes, onion and chili seasoning mix
  5. Spread in pie plate and sprinkle with olives and cheese
  6. In a medium bowl, stir the Bisquick mix, milk, and eggs with fork until blended
  7. Pour into pie plate
  8. Bake 30 to 35 minutes or until knife inserted in center comes out clean
  9. Let stand for 5 minutes before serving
  10. Serve with sour cream, lettuce, and chopped tomatoes
